This is a quickie blog post. A couple of weeks ago I posted a recipe for my Mom's peanut butter cookies and added a bonus recipe for some that I wanted to try. I tried 'em. Yellow cake mix, 1/2 cup vegetable oil, 1 cup peanut butter and 2 eggs. Makes for great consistency and takes all of 3 minutes. They were good the evening that I made them. Even better the following day.

I'm baaacckkk!!
I've been really hit and miss with my blog. Enough so that my last post had to be prompted by my mother! Just when I think I have everything under control and back on schedule BAM! life gets in the way.
In this case, it was a literal BAM! I wrecked my beloved '99 4Runner.
It was a great little vehicle and it truly saved my life. Concrete walls are no match for a seatbelt, airbags and good ol' Toyota engineering. I managed to walk away with just a few bruises, aches and pains. "Grateful" doesn't even skim the surface of what I am feeling even 12 days later. My wonderful husband, family and friends have been incredibly supportive. So many people have come forward to offer assistance and kind words that I can't even begin to name them all. You know who you are, so THANK YOU and I LOVE YOU!

Run: I have only run about 50 yards since my accident. :-( I still have pain in my clavicle that makes it uncomfortable. Coco has been great about getting me out for walks and the 50 yards went well enough that I plan to get on the treadmill today to see how a short run goes. Then I'll take Coco for a an outdoor walk.

Peanut Butter Cookies
1/2 c butter
1/2 c peanut utter
1/2 c white sugar
1/2 c brown sugar
1 egg, beaten
3/4 tsp baking soda
1/2 tsp baking powder
1/4 tsp salt
1 1/4 c flour
Cream butter and peanut butter. Add sugar and well-beaten egg. Add dry ingredients. Form into balls, press with fork ad bake in 375 degree oven for 12-15 minutes.
Tips:
- Roll the balls in a coarse sugar before pressing/baking.
- Store in airtight container with a slice of bread to keep cookies from getting hard. Change out the slice of bread every few days as it becomes hard.
Here is a fun recipe I have been wanting to try for awhile but I keep forgetting to buy yellow cake mix!
Quick 'n Easy Peanut Butter Cookies
Combine 1 box yellow cake mix, 2 eggs, half cup of oil and a cup of peanut butter. Bake for 10 minutes at 350.
Baseball: The Atlanta Braves started off HOT this season, but have cooled down a bit in recent games. The Reno Aces did not start off hot, and sadly, have also cooled down. Frustrating season for them. Must be because I haven't made it to a single game. I'm going to have to do something about that!
